One of my favorite summer recipes is super simple and uses in-season ingredients, the cucumber and tomato salad.
As many varieties as there of cucumber, so goes the cucumber salad. There are multiple ways of literally slicing, dicing, and seasoning this simple salad to suit local palates.
Olive oil and vinegar are the common ingredients.
Cucumber and Tomato Salad is a Global Affair!
Hungarians add dill, salt and pepper to thinly sliced English cucumbers.
The Israeli version explodes with flavor using parsley, sliced onions, lemon juice, and mint.
Ginger plays a leading role in the simple deliciousness that is the Japanese version.
Thailand’s rendition is a simple mix of cilantro, peanuts, and a dash of heat.
There’s Korean red pepper cucumber salad and Mexico has its version with oregano and lime.
And last, but not least, and certainly the list is longer than what I can mention, the Greek version adds yogurt, garlic, and lemon juice.
So many options!
Since we are in the midst of cucumber high season, grab some of these green delights from your local farmer’s market and try several of these versions! Invite different family members and friends to make a cucumber salad from a different country. Have a taste-off! Discuss the different flavors and guess the country of origin. Ingredients
- 2 cups cherry tomatoes, halved
- 1 English cucumber, sliced and quartered
- 1/4 red onion, large dice
- 1 tablespoon olive oil
- 1 tablespoon red wine vinegar
- 1 tablespoon mint, chiffonade
- 1 teaspoon dried oregano
- 1/4 teaspoon kosher salt
Instructions
- Stir together all the ingredients in a mixing bowl.
- Taste.
- Adjust seasonings as needed.
