How Did Pancakes Come to Be?

Believe it or not, pancakes, have a long and rich history.

This is testified to through the belly of Otzi the Iceman.

Otzi was a remarkably preserved mummy, estimated to be 5,300 years old when he was discovered in the Alps in 1991.

When scientists examined his body they found evidence leading them to believe that pancakes had been one of these last meals in 3300 BC.

History also tells us that Ancient Greeks made pancakes and it’s said the 5th Century Greek poets Cratinus and Magnes both agreed that pancakes were a delicious breakfast item.

Fast forward several centuries and we find the first printed pancake recipe in a European cookbook from the 15th century.

Because of their simplicity and versatility, almost every culture and cuisine includes some sort of pancake – a round, thin, cake-like food usually cooked by pouring batter on a griddle.

France is known for its desert-style Crepes.

Ethiopians eat Inerja. It’s a sourdough-type flatbread with a spongy texture used to scoop up hearty stews and vegetables.

In pre-Christian times, East Slavic peoples ate blinis which were thought to be a symbol of the sun. The custom of eating blinis continues in Russia today with caviar and sour cream a traditional topping.

Countries all over the world have adopted this delicious and simply prepared food into their cuisine in all sorts of ways.

While Americans party with Mardi Gras celebrations on Fat Tuesday, the day before Ash Wednesday and the commencement of Lent, our friends in the United Kingdom across the pond eat pancakes.

On this day, called Shrove Tuesday, more than 117 million pancakes are consumed.

This delicious custom began as a way to use up food items traditionally given up during Lent.

Ingredients

Scale
  • 1 cup buttermilk
  • 1 egg
  • 2 tablespoons butter, melted
  • 1 cup flour
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder

Instructions

  1. Whisk together egg, buttermilk, and melted butter.
  2. Whisk dry ingredients together.
  3. Add the dry ingredients to the buttermilk mixture and whisk just until combined.
  4. Ladle 2 oz. of batter onto a hot griddle or cast iron skillet.

Notes

  • Can be made ahead and gently rewarmed in the microwave or oven for a quick breakfast.
  • This is just as good with 1 tablespoon of sugar if you’re looking to reduce your sugar intake.
