Happy Independence Day, America!
July 4th is THE most popular day for grilling. The National Retail Federation expects that Americans will spend $6.9 billion on food for Fourth of July cookouts and picnics. That’s down from $7.1 billion last year. It seems that the middle of the week celebration puts a bit of a crimp into the planned festivities.
Stars, Stripes, and Turtle Soup
But our Founding Fathers knew how to celebrate life at the freedom table. Historians say the first Independence Day meal was quite the party. They shared turtle soup, poached salmon, peas and new potatoes, fine wines and spirits. And a grand fireworks display to end the night. Thomas Jefferson was also known for “taking good care of his table”. Food and wine was the center of every party. It is said he would leverage these gatherings to gain favor among other politicos and devise policies.
The Number Gathered At Our Nation’s Table Has Grown
The number of people gathered at our country’s table has certainly grown over the years. America’s estimated population is 326 million. Up from the 2.5 Million when the Declaration of Independence was signed in 1776. We are a nation of diversity and we are free.
Poet and author Rudyard Kipling said, “All we have of freedom, all we use or know – This our fathers bought for us long and long ago.”

Where ever you gather this July 4th, with family and friends, whatever you eat, take a moment and give thanks. For the land we live in, for the freedom to celebrate, for those who have passed before us, and especially those who have made the ultimate sacrifice for the freedoms we enjoy today.
