- Yield: 12 egg bites 1x
Ingredients
- 5 large eggs
- 1/2 cup cottage cheese
- 1/2 cup shredded Gruyère (or your favorite cheese!)
- 1/2 cup cooked protein (crumbled bacon, diced ham, or sausage)
- 6 tablespoons, spinach, chopped
- 3 tablespoons bell pepper, small dice
- 3 tablespoons, mushrooms, diced
- 1/4 teaspoon kosher salt
Instructions
- Heat oven to 300˚ F and grease a 12-cup muffin pan.
- Combine the eggs, cottage cheese, shredded cheese, and kosher salt in a blender.
- Combine the spinach, bell pepper, and mushrooms in a small bowl, then divide the veggies equally among the 12 muffin cups.
- Pour the egg mixture over the veggies, ONLY filling each muffin cup halfway.
- Equally distribute the protein on top of the egg filling among the 12 muffin cups.
- Bake for 20 minutes.
- Unmold and enjoy!

- Use a thick-cut bacon slices; you’ll need 4-5 strips for 1/2 cup
