Turkey, Pear, and Apple Salad

Step out of the everyday mundane salad with this delightful turkey, apple, and pear salad. It’s a delicious way to use leftover turkey or chicken.

Ingredients

Scale
  • 2 1/2 cups diced turkey
  • 1 apple, cubed
  • 2 cups fresh cranberries
  • 1 pear, small dice
  • 1 cup celery, small dice
  • 1 jalapeño, small dice
  • 1 tablespoon ginger, grated
  • 1/4 teaspoon cayenne
  • 2 tablespoons fresh lime juice
  • 13 tablespoons mayonnaise
  • kosher salt to taste

Garnish

  • Toasted pecans
  • Pomegranate seeds

Instructions

  1. Process the turkey, apple, and cranberries separately in a food processor with 2-3 pulses each. After processing each place into a large bowl.
  2. Add the chopped pear, celery, jalapeño, grated ginger, cayenne, and lime juice to the turkey, apple, and pear mixture.
  3. Stir to combine.
  4. Add just enough mayonnaise for the salad to hold together, or add as much as makes you happy. 🙂
  5. Taste and adjust the seasoning with kosher salt.
  6. Garnish with the toasted pecans and pomegranate seeds.

Notes

1. Make this salad as spicy as you like by increasing or decreasing the cayenne, jalapeño, and fresh ginger. Fresh ginger will also make it perfumey so go lightly. And as always, taste as you go.

2. If you don’t have fresh cranberries, stir in fresh cranberry sauce. Adjust the mayonnaise as needed for the consistency and taste that makes your tastebuds dance.
