  • 1 1/4 teaspoon kosher salt
  • 1/2 teaspoon freshly ground pepper
  • 4 1/2-inch boneless pork loin chops

  • 2 limes, zested (reserve the zested limes)
  • 3 tablespoons cilantro, chopped

  1. Preheat oven to 450.
  2. In a small bowl, mix together the chili powder, cumin, kosher salt, and pepper.

  6. Sear until brown and then flip to the other side.
  7. Sprinkle the minced garlic on top of the pork chops and place the skillet in the oven for 3 minutes, or until chops reach a temperature of 145.
  8. Remove the skillet from the oven and plate the pork chops.
  9. Pour leftover juices from skillet over the top of the pork chops, if desired.
  10. Garnish with a squeeze of lime juice, the lime zest, and the chopped cilantro.
