The Humble and Fabulous Frittata

The humble and fabulous frittata is a delicious way to use up vegetables and leftovers. From stovetop to plate including cleanup, it’s 30 minutes tops.

Ingredients

Scale
  • 6 eggs
  • 1/2 cup cream
  • 1 1/2 cups diced vegetables (mushrooms, bell pepper, onions, etc.)
  • 1 cup spinach
  • 1 tablespoon butter
  • kosher salt
  • pepper

Instructions

  1. Preheat your oven to 425 degrees F.
  2. Whisk together the eggs and cream. Season kosher salt.
  3. Heat a 10-inch sauté pan over medium heat.
  4. Once heated, add the butter and the vegetables and sprinkle with a bit of kosher salt.
  5. Sauté vegetables until just wilted.
  6. Add the spinach, stir to distribute throughout the pan.
  7. Pour in the egg and cream mixture.
  8. Cook a 1-2 minutes on the stovetop without stirring.
  9. Transfer the sauté pan to the oven and cook until puffed and set in the middle about 5-10 minutes.

Notes

Double this recipe for a crowd. The frittata will be thicker so you can cut it in thinner slices. And it will require more time to cook.
