Smashed Garlic Potatoes

The transformation from lowly tuber to spectacular bowl of garlic smashed potatoes takes only 25 minutes. Rekindle your love affair with the potato! Your tastebuds will thank you.

Ingredients

  • 2 lbs. potatoes
  • 4 tablespoons butter
  • 8 garlic cloves, minched
  • olive oil
  • kosher salt
  • pepper
  • parsley

Instructions

  1. Fill a pot large enough to hold the potatoes with an inch of water above the potatoes.
  2. Salt the water; add the potatoes to the cold water and bring to a boil over high heat.
  3. Reduce heat; simmer potatoes for 10 minutes or until done.
  4. While the potatoes are cooking, mince the garlic.
  5. Add the butter to a small saucepan.
  6. Once the butter begins to melt, add the garlic. Once the butter is completely melted, keep it warm until the potatoes are done.
  7. Drain the potatoes and return them to the pot they were boild in. Lightly smash them.
  8. Pour the butter and garlic mixture over the top. Stir to combine.
  9. Taste and adjust seasoning with salt and pepper as desired.
  10. Drizzle olive oil over the top.
  11. Garnish with lightly chopped parsley.

Notes

1. Use a starchy potato for the best results.
2. Always start your potatoes in cold water so the potato will cook evenly all the way through.
3. Always salt the water when you boil potatoes as they absorb the liquid they’re cooked in. This ensures you get a head start on a great tasting potato.
