Simple and Easy Chili

You can have a bowl of delicious chili from countertop to dining table in 30 minutes. It’s an easy weeknight recipe that will have your tastebuds dancing!

Ingredients

  • 1 lb. grass-fed beef
  • 1 1/4 cup onion, small dice
  • 1 tablespoon fresh garlic, diced
  • 2 tablespoons chili powder
  • 2 tablespoons cumin
  • 1 tablespoon paprika
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne
  • 1/2 teaspoon kosher salt
  • 115 oz can stewed tomatoes
  • 18oz can tomato sauce
  • 2 tablespoons tomato paste
  • 1/2 cup coffee porter beer

Instructions

  1. Heat a pot over medium-high heat.
  2. Once it’s hot drizzle it with olive oil and add the grass-fed ground beef.
  3. As the beef begins to brown, add the diced onion.
  4. Once the beef is cooked through, add the garlic.
  5. Sauté until fragrant, about 1-2 minutes.
  6. Add the remaining spices. Stir to combine.
  7. Add the stewed tomatoes, the tomato sauce, and tomato paste.
  8. Using a wooden spoon, break up the large pieces of the stewed tomatoes.
  9. Add the beer and stir to combine.
  10. Lower the heat and simmer 15-20 minutes.
  11. Voila! Your chili is done.
  12. Taste and adjust the seasoning with additional kosher salt as needed.
  13. Serve with fresh diced onions and grated cheese.

Notes

Grass-fed beef is lean. If you use a higher fat content of ground beef, you may need to drain some of the fat before adding the spices.

Makes 4-1 cup servings.
