- 16 oz of carrots, shredded
- 2 teaspoons of cumin, toasted
- 2 teaspoons of coriander, toasted
- 4 tablespoons fresh lemon juice
- 4 tablespoons chopped cilantro
- Mix carrots, cumin, coriander, and fresh lemon.
- Stir to combine.
- Add the chopped cilantro right before serving.
