Raspberry Walnut Vinaigrette

Big things do come in small packages! Capture the brightness and energy of spring with this vinaigrette. This combination is super simple and super flavorful.

Ingredients

  • 1/4 cup olive oil
  • 1 cup raspberries, fresh
  • 2 tablespoons walnuts, toasted, lightly chopped
  • 1/4 cup balsamic vinegar
  • 1/4 cup red onion, lightly chopped
  • 1/4 teaspoon sugar
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon black pepper, ground

Instructions

  1. Place all the ingredients in a blender or food processor. Process until smooth. Taste and adjust seasoning. Makes 1 1/2 – 2 cups.

Notes

  • Substitute the balsamic with red wine vinegar or unseasoned rice vinegar for a lighter flavor.
  • Add a bit of water to thin out the dressing, if needed, for desired consistency.
  • Add more black pepper (or red pepper flakes) if you enjoy more of a peppery bite.
