Ingredients
Scale
1/4 cup olive oil
1 cup raspberries, fresh
2 tablespoons walnuts, toasted, lightly chopped
1/4 cup balsamic vinegar
1/4 cup red onion, lightly chopped
1/4 teaspoon sugar
1/4 teaspoon kosher salt
1/8 teaspoon black pepper, ground
Instructions
Place all the ingredients in a blender or food processor. Process until smooth. Taste and adjust seasoning. Makes 1 1/2 – 2 cups.
Notes
Substitute the balsamic with red wine vinegar or unseasoned rice vinegar for a lighter flavor.
Add a bit of water to thin out the dressing, if needed, for desired consistency.
Add more black pepper (or red pepper flakes) if you enjoy more of a peppery bite.
