Pinto Bean Salsa

A tasty and fun way to incorporate more legumes into your diet! And a delicous makeove for a familiar bean. Use canned pinto beans or try you hand at cooking them. Pinto beans that been soaked overnight only require 2 minutes of cooking time in a pressure cooker.

Ingredients

  • 1 16-oz can pinto beans
  • 1 medium tomato chopped
  • 1/4 cup white onion, minced
  • 2 chipotle pepper in adobo sauce, diced
  • 2 teaspoons adobo sauce
  • 2 garlic cloves, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon lime zest
  • 1 tablespoon lime juice
  • 2 tablespoons cilantro
  • 1/4 teaspoon olive oil
  • kosher salt

Instructions

  1. Mix together all the ingredients in a medium bowl. Place in a serving dish.
  2. Finish with a drizzle of olive oil.
  3. Serve with tortilla chips.
