Maryland Succotash: A Simple Side Dish with Chesapeake Charm

Maryland-style succotash recipe with corn, lima beans, butter, lemon, and Old Bay — a bright, easy side dish with Chesapeake charm.

Ingredients

  • 3 cups fresh corn kernels, from about 4 ears of corn
  • 1 1/2 cups frozen baby lima beans
  • 3 tablespoons unsalted butter
  • 1/2 teaspoon Old Bay seasoning
  • zest of 1 lemon
  • 1 tablespoon lemon juice, plus more to taste
  • 2 tablespoons parsley (or chives), chopped
  • kosher salt
  • red pepper flakes, optional
 

Instructions

  1. Steam the frozen baby lima beans straight from frozen until tender, about 8 minutes. Season with a pinch of kosher salt while they’re still warm.
  2. Melt the butter in a large skillet over medium heat.
  3. Add the corn to the skillet along with a pinch of kosher salt.
  4. Sauté for 2-3 minutes until glossy and just tender.
  5. Gently fold in the steamed lima beans. Add the Old Bay seasoning.
  6. Gently sauté for 1-2 minutes.
  7. Remove from the heat.
  8. Stir in the lemon zest, lemon juice, herbs, and red pepper flakes, if using.
  9. Taste and adjust with additional kosher salt as needed.
