Make the Dough by Hand
- Whisk flour and salt together in a bowl.
- Pour the flour onto a clean work surface and form a well in the center.
- Add the eggs to the center of well.
- Using a fork, whisk the eggs gradually incorporating the flour.
- Bring the dough ball together, using only as much of the flour as needed.
- Knead for 8-10 minutes until smooth and elastic.
- Wrap tightly and rest for 30 minutes.
- Roll and cut into desired shape.
Make the Dough with a Stand Mixer
- Whisk flour and salt together in a bowl.
- Add the eggs to a stand mixture bowl fitted with a paddle attachment and mix on low.
- Gradually add flour mixture until a shaggy dough forms.
- Switch to a dough hook and knead 5-7 minutes until the dough is smooth.
- Finish with 1-2 minutes of hand kneading.
- Wrap and let rest for at least 30 minutes.
