Homemade Mac and Cheese

Homemade mac and cheese delivers real flavor, creamy comfort, and pure joy for your tastebuds. Ditch the powdered cheese stuff.

Ingredients

  • 2 cups elbow macaroni, cooked and drained
  • 2 slices of bacon, small dice
  • 2 jalapeños, seeded and diced
  • 1 1/4 cup heavy cream
  • 1/4 cup + 2 tablespoons parmesan cheese, grated, divided
  • 1/4 cup + 1 cup shredded cheddar cheese
  • 2 tablespoons panko bread crumbs
  • 1/4 teaspoon smoked paprika

Instructions

  1. Combine 2 tablespoons of grated parmesan with 2 tablespoons panko bread crumbs and smoked paprika.
  2. Cook the bacon in a 10-inch skillet until crispy. Remove the bacon, reserving the grease in the skillet.
  3. Add the chopped jalapeños to the skillet; sautè until tender.
  4. Add the cream to the skillet.
  5. Heat the cream on medium heat until the cream begins to bubble around the edges.
  6. Add 1/4 cup grated parmesan and 1/4 cup cheddar cheese.
  7. Heat until the cheese is melted and incorporated into the cream.
  8. Stir the macaroni into the cream and cheese mixture.
  9. Once combined, pour the macaroni mixture into an 8×8 baking dish.
  10. Sprinkle 1 cup of shredded cheddar cheese over the top of the macaroni mixutre.
  11. Sprinkle the reserved parmesan, panko bread crumb, and smoked paprika mixture over the top of the grated cheese.
  12. Place the baking dish under a broiler for 1-2 minutes until the crumb mixture browns.
  13. Remove from the oven and let the mac and cheese rest 5-10 minutes to give the cheese sauce a chance to set up for the perfect scoopable serving.
