Homemade Buttermilk Pancakes

Yum. A warm breakfast with a drizzle of maple syrup with a side of fruit. What’s not to like?

Ingredients

  • 1 cup buttermilk
  • 1 egg
  • 2 tablespoons butter, melted
  • 1 cup flour
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder

Instructions

  1. Whisk together egg, buttermilk, and melted butter.
  2. Whisk dry ingredients together.
  3. Add the dry ingredients to the buttermilk mixture and whisk just until combined.
  4. Ladle 2 oz. of batter onto a hot griddle or cast iron skillet.

Notes

  • Can be made ahead and gently rewarmed in the microwave or oven for a quick breakfast.
  • This is just as good with 1 tablespoon of sugar if you’re looking to reduce your sugar intake.
