Forget the greens! Knock out this crunchy apple salad with a homemade apple cider vinegar vinaigrette with some simple knife skills.

Salad
1 cup diced apple
1 cup diced carrot
2 celery stalks with leaves
1/4 cup walnuts , toasted and lightly chopped
2 tablespoons dried cranberries, lightly chopped
Shredded Manchego cheese for garnish
Dressing
1/4 cup apple cider vinegar
1 tablespoon honey
3/4 teaspoon cinnamon
3/4 teaspoon allspice
3/4 cup olive oil
Kosher salt
Salad
Toss together the chopped apple, carrot, and celery in a large bowl.
Add 2 tablespoons of the apple cider vinegar dressing.
Toss to combine well.
Mix in the walnuts and cranberries.
Arrange salad on a plate.
Garnish with manchego cheese.
Dressing
Whisk together the apple cider vinegar with the honey, cinnamon and allspice.
Slowly stream the olive oil into the vinegar mixture whisking to incorporate.
Taste and add salt as needed.
