Salad with Red Wine Vinaigrette

With a simple understanding of how to make a vinaigrette you’ll never want to buy a bottled salad dressing again! The classic vinaigrette is 3 parts oil to 1 part acid (vinegar, lemon juice, etc.). This recipe is 2 parts oil to 1 part acid as my preference is for salad dressings on the tart side. The mustard not only adds flavor, it also acts as an emulsifying agent to bind together the oil and the vinegar.

Ingredients

Scale
  • 1/2 teaspoon Dijon mustard
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil
  • Salt
  • Pepper

Instructions

  1. Whisk together red wine vinegar and Dijon mustard in a small bowl.
  2. Slowly stream olive oil into bowl while whisking it together with the red wine vinegar mixture.
  3. Season as desired with salt and pepper.

Notes:

For variations, toss in herbs (parsley, chives, oregano, basil), minced garlic, etc., for additional flavor.
