Turkey Meatballs
1lbground turkey
1/2cuppanko bread crumbs
1/2cup shredded white cheddar cheese
1 large egg
2 tablespoons olive oil
1 teaspoon Dijon mustard
2 teaspoons rubbed sage
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
1/4 teaspoon garlic powder
Apple Cider Glaze
2cupsapple cider
2 tablespoons apple cider vinegar
1 tablespoon maple syrup
2 tablespoons unsalted butter
kosher salt to taste
Thyme-Sautéed Apples
2 medium, crisp apples 1/4" dice
1 tablespoon unsalted butter
1/2 teaspoon fresh thyme
1/2 teaspoon apple cider vinegar
kosher salt to taste
red pepper flakes, optional
Instructions
Heat oven to 400˚F.
Combine the ground turkey, panko, white cheddar, egg, olive oil, Dijon mustard, rubbed sage, kosher salt, ground black pepper, and garlic powder in a mixing bowl.
Mix gently just until the ingredients come together.
Shape the mixture into 12 meatballs, about 2 oz each.
Arrange the meatballs on a parchment lined sheet tray.
Bake for 20-24 minutes, or until the meatballs reach an internal temperature of 165°.
Cider Glaze
Pour the apple cider into a small saucepan and bring it to a simmer over medium heat.
Simmer the cider until it reduces by half to roughly 1 cup.
Whisk in the apple cider vinegar, maple syrup, and butter.
Season the glaze to taste with kosher salt.
Sautéed Apples with Thyme
Melt the butter over medium heat.
Add the diced apples, salt, and pepper.
Sauté for 4-6 minutes, stirring occasionally, until the apples are tender but still hold their shape.
Stir in the apple cider vinegar.
Assembly
Arrange the meatballs over parmesan grits (or your choice of starch or greens).
Spoon the cider glaze over the meatballs.
Garnish with the fresh thyme and red pepper flakes (optional).
