Caprese-Style Sheet Pan Chicken

Caprese-Style Sheet Pan Chicken turns tomatoes, mozzarella, basil, and chicken into an easy, colorful dinner with big, fresh flavor.

Ingredients

  • 4 boneless, skinless chicken cutlets
  • 2 tablespoons olive oil, divided + more for drizzling
  • 1 teaspoon red wine vinegar
  • 1/4 teaspoon fennel seed
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon kosher salt, plus more for the tomatoes
  • 2 cups grape tomatoes
  • 4 cloves garlic, minced
  • 2 anchovies, smashed
  • 4 oz fresh mozzarella
  • 1-2 tablespoons fresh basil, chiffonade
  • aged balsamic vinegar
  • pinch of Maldon salt, optional
  • red pepper flakes, optional

Instructions

  1. Heat your oven to 425˚F.
  2. Place the cutlets in a medium bowl.
  3. Add 1 tablespoon olive oil, red wine vinegar, fennel seed, oregano, thyme, and kosher salt.
  4. Toss until the chicken is evenly coated. Set the chicken aside while you prepare the grape tomatoes.
  5. In a separate bowl, toss the grape tomatoes with the minced garlic, smashed anchovies, and 1 tablespoon of olive oil with a pinch of kosher salt.
  6. Transfer the chicken cutlets to the sheet pan.
  7. Roast the chicken for 18-22 minutes for 18-22 minutes or until the chicken reaches an internal temperature of 160˚F.
  8. Remove the sheet pan from the oven, tear pieces of the fresh mozzarella over the top of the chicken.
  9. Return the sheet pan to oven until the cheese melts and the chicken has reached an internal temperature of 165˚F. Or, for a more golden, bubbly finish, place the sheet pan under the broiler for 2-3 minutes.
  10. Allow the chicken to rest for 5 minutes or so, to allow the juices to settle back in.
  11. Remove the chicken to a serving platter (if desired) and finish with a drizzle olive oil, balsamic vinegar and fresh basil, and optionally, a sprinkle Maldon salt flakes, and red pepper flakes.
