Give this a try for your morning meal. It’s everything that makes breakfast delicious, eggs, sausage, milk, and lots of cheese. It will serve a crowd for brunch, or enjoy leftovers the day after.

Ingredients

  • 1 1/2 lbs. bulk sausage
  • 18 eggs
  • 2 cups milk
  • 1 teaspoon salt
  • 3 cups shredded cheddar cheese
  • 3 cups croutons

Instructions

  1. Heat oven to 325.
  2. Cook and stir sausage over medium heat until light brown. Drain.
  3. Place sausage in greased 13x9x2 baking dish.
  4. Beat eggs, milk, and salt; stir in cheese.
  5. Pour egg mixture over sausage.
  6. Sprinkle with croutons.
  7. Bake uncovered for 45 – 50 minutes.
  8. Let stand 5 minutes before serving.

Notes

This casserole can be prepared a day ahead of baking. Store it in the refrigerator overnight. Add the croutons just before putting it in the oven.
