Fresh basil pesto is easy to make and packed with flavor. Use it as a sauce for pasta, serve it over roasted or grilled vegetables and meats.

Ingredients

  • 2 cups firmly packed basil leaves
  • 1/2 cup Parmigiana Reggiano, shredded
  • 3 cloves garlic, smashed
  • 2 tablespoons pine nuts
  • 1/4 teaspoon kosher salt
  • 1/2 cup olive oil
  • fresh lemon juice

Instructions

  1. Process the basil, Parmigiana Reggiano, garlic cloves, and pine nuts, in the small bowl of a food processor or a small blender.
  2. Add all of the olive oil.
  3. Process just until combined.
  4. Taste and adjust seasoning.
  5. Add a squeeze of fresh lemon juice to brighten the taste, if needed.
