Soba Noodle Stir Fry

Take a “staycation” on a weeknight to the Far East. This is a quick, easy, and delicious dinner that can easily involve the whole family. Made from buckwheat flour, soba noodles are naturally gluten-free (make sure you buy 100% buckwheat noodles), high in fiber, and contain all the amino acids you need for good health.

Ingredients

  • 6 oz soba noodles
  • 8 oz snow peas
  • 2 carrots, bias-cut
  • 1 bell pepper, cut into chunks
  • 4 cloves garlic, minced
  • 1/2 cup soy sauce
  • 1/4 cup balsamic vinegar
  • 1 tablespoon sriracha
  • 2 teaspoons honey
  • olive oil

Garnish

  • 1 tablespoon sesame seeds, toasted

Instructions

  1. Prepare soba noodles according to package directions. Set aside.
  2. Heat a saucepan over medium-high heat. Once hot, add just enough olive oil to coat the bottom of the saucepan. Add the garlic and saute 1-2 minutes or just until fragrant.
  3. Add soy sauce, balsamic vinegar, sriracha, and honey. Simmer 2-3 minutes to blend flavors.
  4. Heat wok on high heat. Once hot, add just enough olive oil to coat the wok, the bottom and the sides.
  5. Add the snow peas and the carrots. Stir fry for 1-2 minutes then add the bell pepper. Stir fry for another 1-2 minutes or just until vegetables are crisp tender.
  6. Place the soba noodles on a platter. Pour 1/2 of the sauce over the noodles.
  7. Arrange the vegetables on top. Pour the remaining sauce over the top of the vegetables.
  8. Garnish with sesame seeds.
