Ingredients

  • 1/2 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons Dijon mustard
  • 2 cloves garlic, finely minced
  • 2 teaspoons dried oregano
  • kosher salt to taste

Instructions

  1. Whisk together the red wine vinegar, fresh lemon juice, Dijon mustard, garlic, oregano, and a pinch of kosher salt in a small bowl.
  2. Slowly drizzle in the olive oil whisking continuously until the mixture is well blended.
  3. Taste and adjust the seasoning, if needed.
  4. Use immediately or store in an airtight container in fridge for up to one week. Shake it well before using if it separates.
