Egg bites are easy to make and totally crave-worthy. They whip-up easily, only need 20 minutes to bake and are delicious any time of day!

Ingredients

Units Scale
  • 5 large eggs
  • 1/2 cup cottage cheese
  • 1/2 cup shredded Gruyère (or your favorite cheese!)
  • 1/2 cup cooked protein (crumbled bacon, diced ham, or sausage)
  • 6 tablespoons, spinach, chopped
  • 3 tablespoons bell pepper, small dice
  • 3 tablespoons, mushrooms, diced
  • 1/4 teaspoon kosher salt

Instructions

  1. Heat oven to 300˚ F and grease a 12-cup muffin pan.
  2. Combine the eggs, cottage cheese, shredded cheese, and kosher salt in a blender.
  3. Combine the spinach, bell pepper, and mushrooms in a small bowl, then divide the veggies equally among the 12 muffin cups.
  4. Pour the egg mixture over the veggies, ONLY filling each muffin cup halfway.
  5. Equally distribute the protein on top of the egg filling among the 12 muffin cups.
  6. Bake for 20 minutes.
  7. Unmold and enjoy!

Notes

  • Use a thick-cut bacon slices; you’ll need 4-5 strips for 1/2 cup
