Bring the magic of New Orleans to your home with these delightfully simple to make beignets!

Ingredients

2 1/4 teaspoons of dry yeast (1 packet of yeast)
1/2cup warm water (between 105˚F-110˚F)
1/2cup evaporated milk
1 egg beaten
1 teaspoon vanilla
2 tablespoons melted butter
1/4cup sugar
1 teaspoon kosher salt
3cups all-purpose flour
peanut oil for deep frying
confectioner’s sugar for garnish
Instructions
Dissolve the yeast in the warm water in the mixing bowl of a stand mixer fitted with a paddle attachment.
Add the evaporated milk, beaten egg, vanilla, melted butter, sugar, and salt, and mix until combined, 30 seconds or so.
Mix in the flour, 1 cup at a time on medium-high speed for 1 minute. Pause to scrape the sides and the bottom of the mixing bowl to ensure all the flour is incorporated halfway through each incorporation of the flour.
Proof the dough overnight in the refrigerator.
Working with 1/4 of the dough at time, roll it out on a floured surface until it’s about 1/4″ thick.
Cut dough into 2″-inch squares. (It’s ok if there are irregular shapes!)
Preheat the peanut oil to 350˚F.
Fry a few squares at a time (don’t overcrowd the beignets in the oil!).
When the beignets puffed and golden, flip them to the other side. Fry just until both sides are golden.
Drain on a wire rack set over a sheet pan.
Dust liberally with powdered sugar and serve warm.
Notes
If you want to make the beignets on the same day rather than proofing overnight, allow several hours for the dough to proof in the refrigerator. My experience is they are best when proofed overnight.
